2 tsp olive oil
Four 4 oz boneless/skinless chicken thighs or breasts
1 sweet onion chopped
3 tsp minced garlic
3 C sliced mushrooms
One 14 1/2 oz can diced tomatoes
1 green bell pepper, seeded and diced
1/4 C tomato paste
1 tsp dried oregano
1/4 tsp pepper
4 C hot cooked pasta of your choice

In a large non-stick skillet heat the oil. Add the chicken and brown 2 minutes on each side. Transfer to a plate. In the same skillet, cook the onion and garlic. Stir as needed cooking about 5 minutes until softened. Add the mushrooms, tomatoes, bell pepper, tomato paste, oregano and pepper. Bring to a boil, stirring occasionally. Return the chicken to the skillet. Reduce heat and simmer, covered. Cook about 25 minutes until chicken is cooked through, stirring occasionally. Plate the pasta topped with chicken and sauce.
