1 T olive oil
1 onion, julienned
3 cloves garlic, chpd
4 C sliced chanterelle mushrooms
4 C sliced button mushrooms
1C red wine
1/4 C balsamic vinegar
2 tsp chpd fresh rosemary
2 tsp chpd fresh thyme
salt
pepper
1/2C grated swiss cheese
pie crust for a double crust

Directions:
Directions:
Prepare the filling by heating oil in a pan over high heat. Add onion and garlic and saute until fragrant. Add mushrooms and saute until tender (5-6 min). Add red wine and reduce heat until 1/2 C liquid remains. Add vinegar, rosemary and thyme and reduce again until 1/2 of liquid remains. Season to taste with salt and pepper. Let cool.

Preheat oven to 425 . Cut dough in half and roll out to a 10" circle. place rolled crust in the bottom of a 9" pie pan. Sprinkle evenly with swiss cheese and pour the filling over it. Roll out the second half of the dough. Cover the filling with second crust and crimp the edges to seal the crusts together. Place the pie on the center rack of the oven and bake for about 15 min. Decrease the heat to 350 and bake for 25 to 30 minutes more, or until golden. Remove the pie from the oven and rest for about 5 minutes before slicing.
