2 Tbsp vegetable oil
1 sweet onion chopped
1/2 C celery, finely chopped
1 seeded jalapeņo pepper, finely chopped
1 1/4 C ketchup
1/2 C cider vinegar
1/2 C water
1/3 C sugar
1/2 tsp cayenne pepper
1/2 tsp salt

In a saucepan over medium-high heat, warm the oil. When hot add the onion and celery. Cook until softened about 7 minutes, stirring occasionally. Add the remaining ingredients and stir well. Bring to a boil, then reduce heat to low, cover partially and simmer until the sauce has thickened, stirring occasionally. Simmer time is about an hour to an hour and a half. Makes 2 1/2 C sauce. Enough for 5-6 lb of meat.
