Homemade Beef or Buffalo Jerky Recipe

Ingredients: 2/3 c. Worcestershire sauce 2/3 c. soy sauce 1 tsp. black pepper (coarse is best) 1 tsp. garlic powder (not a salt mix) 1 tsp. onion powder (not a slat mix) 1 tbsp. salt (adjust to suit your taste--the soy sauce provides a salty taste too.) 1 tbsp. liquid smoke (optional)--but Delicious) 2 lbs 1/4 in. thick sliced beef or buffalo roast

Directions:Mix all ingredients together in a one gallon ziplock baggie. Add meat and mix together so meat is coated. Marinate in refrigerator for 8 to 12 hours. Once or twice during this time, shake the bag up and massage the meat for best saturation. After taking meat out of the bag, lay them out on double layer of paper towel and lay another paper towel on top and press all around to remove excess moisture and juice from the meat. Lay strips of meat onto dehydrator racks and try not to have the meat touching and create patterns that allow air to flow through the trays. Set the dehydrator to the jerky temperature setting and dehydrate for 4 to 6 hours. At about the half way point, shut the dehydrator off and flip each strip of meat. The jerky should be dry and stringy when done. Enjoy!!! |

Notes: You can replace the soy sauce with equal amount of your favorite BBQ sauce or Teriyaki sauce or Maple flavoring (a hint of maple flavor is really awesome. For Hot/Spicy flavor--add 2-3 tsp. Tabasco sauce and /or 1-2 tsp. c. crushed red pepper
