1 lb. beef roast or buffalo roast
1/2 c. apple cider
1/3 tsp. white pepper
1/5 tsp. nutmeg
1 tbsp. corn syrup
pinch cinnamon
pinch of salt
1 envelope curing salt

Directions:
Directions:
Slice roast into 1/4 in. thick strips (or to get creative try using Christmas shaped cookie cutters). Combine salt and curing salt into a ziplock baggie, add remaining ingredients into the baggie. Shake the liquid mixture well, add the in the meat. Shake the meat and liquid mixture together well, making sure strips of meat are coated. Marinate 4 to 8 hours in refrigerator, shaking baggie up 1/2 way through the time frame. Remove strips from baggie and place on a double layer of paper towels and cover with another double layer of paper towel to soak up any excess moisture and marinate from the meat (can use rolling pin to get more excess off the meat). Place strips on dehydrator racks, without touching each other. Dehydrate on the lowest temperature anywhere from 4 to 6 hours. Be sure to check periodically and turn the strips over, so you can have your jerky just the way you want it.
