1/4 c. butter
5 tbsp. flour
1 tsp. salt
1/4 tsp. onion salt
1-1/2 c. milk
2 c. diced cooked turkey or chicken
2 tbsp. slivered almonds (optional)
1-1/3 c. minute rice
1-1/2 c. turkey or chicken broth
1/2 c, grated American cheese
1-1/2 c. cooked asparagus or broccoli or green beans

Melt butter, stir in flour, 1/2 tsp. salt and onion salt, stir in milk. Cook on low heat, stirring until thickened. Pour rice into 2 qt. shallow casserole dish. Combine broth and remaining salt. Pour over rice, sprinkle half the cheese over rice, top with vegetables, then turkey or chicken. Pour sauce over all, sprinkle remaining cheese over the top. Bake at 375º for 20 minutes. Top with almonds.
