3 pounds firm white fish fillet
1/4 cup white wine
2 tablespoons lime juice
2 pounds tomato
1 teaspoon salt
1/4 cup olive oil
1 onion, MEDIUM SLICED
2 cloves garlic, MINCED
1 bay leaf, MEDIUM
1/2 teaspoon oregano
12 green olive, PITTED
2 tablespoons capers
1 jalapeño pepper, JULLIENNE
1/2 teaspoon salt
2 tablespoons olive oil

Directions:
Directions:
Marinate the fish in lime juice, 1 tsp salt and 1/4 cup wine for 2 hours. Saute onion and garlic in 1/4 cup olive oil until soft. Add remaining ingredients (sans olive oil) and simmer for 10 minutes. Drain fish and place in shallow baking dish. Pour the sauce over the fish and add the remaining olive oil on the top. Bake uncovered in 350 oven until done (20 to 40 minutes depending on thickness of fish). Baste with the sauce to keep from browning
