2 boxes lime Jello
1 1/2 cups pineapple juice
1/2 cup hot water
1 cup pecans
1 pkg. cream cheese
1 sm. jar pimiento (optional)
1 small can crushed pineapple
1/2 pt. whipping cream, beaten

Directions:
Directions:
Mix Jello with pineapple juice and hot water. Chill, but don't let congeal. Mix cream cheese in with Jello, using a whisk. Add remaining ingredients; mix well, and refrigerate.

This is Mother's recipe; she loved to make this on holidays. I'll never forget the time our cousin, Sarah, reached for her fourth serving and said, "Oh Aunt Polly, this is so filling!"
