3 parts white cornmeal
1 part flour
salt
vegetable oil

Directions:
Directions:
Pour oil in iron skillet, approximately 3/4 inch high and heat. Mix dry ingredients; add enough boiling water to reach proper consistency. Mixture needs to be a bit on the dry side. Take small handfuls of dough; pat to proper thickness and place in grease. Fry fast enough to not be packy, but slow enough to cook throughout. Turn patties with spatula to brown both sides. Remove and drain on paper towel.
