1 cup sugar
1 cup boiling water
4 tbsp. lemon juice
1 tbsp. butter
2 egg yolks
3 tbsp. cornstarch
1 lemon rind, grated
pie crust
Directions:
Directions:
Mix sugar and cornstarch; add boiling water, stirring constantly. Cook for 2 minutes in double boiler. Add beaten egg yolks, butter, rind, and lemon juice. Cook until thick. Cool, fill baked pie shell, and top with meringue. Brown in 325 degree oven.
