• 3 C flour
• 2 tsp cinnamon
• 1 tsp baking soda
• 1 tsp salt
• ½ tsp baking powder
• 3 eggs
• 2 C sugar
• 1 C oil
• 3 tsp vanilla
• 2 C grated zucchini

Directions:
Directions:
Sift together flour, cinnamon, baking soda & salt. Set aside. Mix together eggs, oil, sugar and vanilla. Add to flour mixture with zucchini. Place in 2 greased and floured large loaf pans or 8 mini loaf pans. Bake at 350 – 1 hour for large pans, 25 minutes for mini pans. Let cool in pan 10 mins before cutting.
