2 lbs ground beef
3 Tbsp diced frozen onions
1/2 tsp garlic
1/2 tsp salt
1/2 pkg taco seasoning
2-19oz cans of enchilada sauce
1 pkg of Uncle Ben's 90 Sec Spanish Rice
8 oz shredded Colby cheese
12-8" flour tortillas

Directions:
Directions:
Brown ground beef and onions, season with garlic and salt; set aside. Prepare Spanish rice according to package directions.
Spoon meat mixture with rice and cheese near bottom of each tortilla. Fold ends in and roll up. Arrange in 9" x 13" pan.
Pour enchiladas sauce over tortillas and top with any left over meat, rice and cheese.
Bake at 350º for 30 minutes, 1 hour if frozen.
Garnish with favorite Mexican toppings.
