Orange or grapefruit rind.
sugar
water
cardamon

Directions:
Directions:
1. Put rinds in cold water and bring to a boil.
Boilfor 10 minutes.
Drain and repete 2 more times.
Drain and rinse in cold water.
Scrape away white pithy part.
2. for each cup of rind add 1 cup of water and 1 cup of sugar and a small pinch of cardamon.
Cook slowly until syrup is completly absorbed.
Stir frequently and watch carefully near the end.
3. Allow to cool and coat with granulated sugar.
Dry overnight.
4. store in air tight container.

We found it is easier to peal it into strips then to cut it after it's cooked.
Can be dipped in dark chocolate after it's cooled.
You can use cinnamon instead of cardamon or omit both.


We give these as christmas gifts. They are a favorite every year. The one year we didn't do them we HEARD about it.
