Living in Washington we have access to wonderful fresh fruit and a way to enjoy it is to roast it!

Take your favorite fruits these are some of my favorites

Pears
apples
peaches
plums
nectarines
pineapples

a sprig of rosemary
1 T of fresh lime juice
2 T of sugar or raw sugar
2 T unsalted butter cut into pieces

Directions:
Directions:
Preheat oven to 400

quarter , pit, core, seed and otherwise prepare fruit for baking
prick the skins of fruit you don't want peeled.

In your roasting pan toss the fruit, sugar, butter, lime juice and rosemary.

Roast. Toss after about 10 minutes. Cook until fruit is tender (depends on the fruit) usually about 15-20 minutes total.

Serve warm with ice cream or on its very own.

If not all is eaten day one, which is rare. I store in the fridge and chop into my yogurt or oatmeal the next day.
