1 cup flour (white, wheat, barley, teff, rice, or any combo works)
1 cup milk (soy, almond, rice, or cow)
2 Tbs. canola oil (or half with applesauce)
3 Tbs. maple syrup or juice
1 Tbs. baking powder
1 tsp. salt

Additions to add: 1/2 cup ground oats, flax meal, or 1/2 cup ground walnuts or almonds

Mix all ingredients together and cook pancakes.

I make a triple batch up and we eat them every morning for the week. Also, because there is a bit of sweetener in the pancakes, we often eat them plain.
