Dutch Apple Pie Recipe

For 9-inch pie crust:
1 1/2 c flour
1/2 t salt
1 T sugar
1/2 c crisco
3-5 T ice water
Filling:
2 1/4 lbs apples
1 T lemon juice
2 T flour
3/4 c granulated sugar
1/8 t salt
1 t cinnamon
Topping:
2/3 c sifted flour
1/3 c packed light brown sugar
1/3 c chilled butter

Directions:
Directions:
Crust: mix ingredients together, roll out pie crust and refrigerate.
Topping: Combine flour and sugar in medium bowl. Cut in butter with pastry blender (or use fingers). Refrigerate until ready to use.
Filling:
Core apples, pare, slice thinly into large bowl. Sprinkle with lemon juice. Combine flour, sugar, salt, and cinnamon and mix well. Toss with apples. Turn filling into unbaked pie shell, spreading evenly. Cover with topping and bake 40-45 minutes at 400º. (If top is browning too quickly, cover loosely with sheet of aluminum foil.

The "other" Nancy Weisenhorn is known for her chocolate chip cookies--I'm known for my apple pie. This pie is the most requested recipe in my portfolio and gets rave reviews every place I take it.
