1 deep dish pie shell 9 inch
(best to bake it 8-10 minutes at 350 degrees) and cool it!
4-5 medium tomatoes sliced (I like mine pealed too)
1 cup mayonnaise
1 cup shredded cheese (cheddar or 1/2 cheddar and 1/2 moZzarella)
1 egg
1/2 cup FRESH basil chopped (or 1 tsp dried but it is not as good)
1/4 cup chopped spring onions &/or chives

Directions:
Directions:
Mix mayo, cheese, basil, salt and pepper to taste
Place onions and then tomatoes in the pie shell. Top with mayo mixture, spread it to the edges to seal the toms good!
Bake 35-45 minutes at 350 or until golden brown. (ooooooo so pretty)
Let it cool before slicing. Cut in two and share!
