1/4 c. pistachios, shelled, dry roasted and finely chopped
1/2 c. goat cheese
1/4 c. vinaigrette of choice
1-5 oz. package salad mix
1 c. grapes, seedless, halved
1/4 t. ground black pepper, fresh

Directions:
Directions:
Place pistachios in a shallow dish. Divide cheese into 12 equal portions, rolling to form 12 balls. Roll each ball in the pistachios until well coated. Set balls aside.
Combine dressing of choice and greens together in a large bowl. Divide among four salad plates. Top each with 1/4 c. grapes and 3 cheese balls. Sprinkle each salad with pepper.
