1 cup crushed cornflakes
2 tsp. seasoned pepper
1/4 tsp. salt
4 egg whites
1/4 cup water
4 fresh orange roughy fillets
1/4 cup all-purpose flour

Directions:
Directions:
In a shallow dish, combine cornflakes, seasoned pepper and salt. In another shallow dish, beat egg whites and water. In a third shallow bowl, add flour. Coat fish with flour; dip in egg white mixture, then roll in cornflake mixture. Place on a baking sheet coated with cooking spray. Bake at 425 degrees for 9 to 11 minutes or until fish flakes easily with a fork.

There are two things I'm not wild about -- fish and diet foods!! However, this recipe is an exception; it is from a low-calorie cookbook and one of my favorite dishes. One 4 oz. fillet has only 158 calories, 1 g. fat, and 16 carbohydrates! Try it; it's delicious!
