6 boneless skinless chicken breasts, 1" cubed
oil for frying
2 c flour
1 T each: salt, pepper, garlic powder
1/2 c brown sugar
1 T cornstarch
1 (13 1/4 oz) can pineapple chunks or tidbits
1/3 c vinegar
1 T soy sauce
1/2 a bell pepper, cut into slivers

Lightly deep fry chicken cubes that have been shaken in a gallon ziplock bag with flour, salt, black pepper, garlic powder. In a separate saucepan over medium heat, mix sugar and cornstarch. Stir in pineapple with juice, vinegar and soy sauce. Heat to boiling, stirring constantly, then reduce the heat, cover, simmer, stirring occasionally for about 5 minutes. Stir in green pepper and chicken, cook for an additional 5 minutes. Serve over rice.
