5 lb white potatoes, peeled & sliced
1 small onion, finely diced
8 oz cream cheese
1 c sour cream
1/2 c milk
1/2 stick butter
salt to taste
1/2 c parmesan cheese
1/2 c shredded cheese of choice

Directions:
Directions:
Boil potatoes in salted water until fork tender. Drain potatoes, then beat them with a hand mixer on low while adding all other ingredients except parmesan and shredded cheese. Salt to taste, and add or reduce milk as needed. Pour potato mixture into a buttered 9X13 casserole dish and top with parmesan cheese and extra butter. Bake at 375º for 45 minutes or until lightly browned and bubbly.
