Ingredients: 2 T butter 2 to 3 stalks celery 1 medium onion diced to small pieces 2 to 3 carrots grated 1 box chicken broth 4 cups water 2 T Better than Butter chicken Base 2 T plain flour 1 cup hot water 2 T dried parsley 2 boxes Uncle Ben's Original Wild Rice (cooked) 1 plain rotisserie chicken skin removed and de-boned and shredded Half and Half (if desired, see note)

Directions:In skillet melt butter add veggies and saute til tender and set aside. In a large soup pot combine the chicken broth and bouillon and simmer. In a large measuring cup add the flour and very slowly add the hot water stirring constantly to thoroughly mix. To simmering broth add the flour mixture and simmer for 10 minutes more. Stir in the parsley. This will provide body for the soup. Taste the soup base and add more Chicken Base if needed for flavor. Meanwhile cook rice in a separate boiler according to package directions. Add the cooked rice, deboned and shredded chicken and veggies to the soup base. (See Note) |

Notes: If desired you can add a T of half & half to a hot bowl of the soup for creamed chicken soup. This is delicious. We add it a bowl at a time while the soup is very hot in order to save the leftover soup without the dairy.
