1 prepared opossum.
Enough dressing to fill the cavity
Oil or soft butter.
1 cut clove of garlic.
Flour.
2 cups of stock.
1/2 carrot
A few raisins.
Sweet potatoes.

Directions:
Directions:
Preheat oven to 450 deg. Parboil opossum for 1 hour. cover the ears and tail with aluminum foil .Place possum in a pan, bake uncovered for 15 min. Reduce heat to 350 deg. and cook until tender. Baste every 15 min with boiling stock and pan drippings. Remove aluminum from ears and tail. Place on platter. Place carrot in mouth, and raising in eye sockets. Ring with sweet potatoes and garnish with greenery.

Best to obtain an opossum. Pen it and feed it milk and cereal for 10 days.
Clean the carcass, as you would a pig, by scalding and scraping.
Also remove eyes and close lids. Remove red glands in small of back and under each foreleg.. Place a slab of wood in mouth to hold it open. Skewer legs in to position, by pulling forelegs forward and pulling hind legs into a crouching position..
