12 - 18 hard boiled eggs
2 - 3 cans sliced beets (keep juice)
2 c sugar
11/2 c apple vinegar
1/2 c water
salt and pepper to taste

Directions:
Directions:
Bring sugar, vinegar and water to a boil Cook only until sugar is dissolved. Add salt and pepper. Cool and remove the shell from the eggs. Place eggs in large jar. Put sliced beets in jar with eggs. Pour liquid over beets and eggs. Refrigerate for at least 24-48 hours before using.

This is a traditional PA Dutch food served at the holidays and picnics. They are great sliced in half with a little mayo, salt and pepper
