3 T butter or margarine
1/2 onion- chopped
1/4 lb ground pork sausage
1 large can Pinto beans- drained but not rinsed
1 lb canned chicken (or shredded cooked chicken)
3 chicken bouillon cubes dissolved in 2 C boiling water
1/2 C instant white rice
1 C diced tomatoes- drained
1/2 can cream of chicken soup

Seasonings: cumin, garlic powder, red pepper flakes, chili powder, parsley

Directions:
Directions:
Saute onion in 3 T butter until transparent and tender. Add sausage and cook until done. Add pinto beans and chicken and simmer for 5 mins.
Add broth, rice, tomatoes, cream of chicken soup and spices. Simmer for 30 mins stirring occasionally.

Serve with shredded cheddar and tortilla chips.

Made this one up myself on a cold November night. Gabe loved it but said since it was so thick he liked eating it as a chip dip!
