2 teaspoons toasted sesame oil
2 cups sliced fresh snow peas,
1 cup thinly sliced carrots
1 cup sliced mushrooms
1/2 cup green onion- thinly sliced
1 tablespoon light soy sauce
8 ounces Lo Mein rice noodles cooked
OR cooked rice
*cooked chicken optional
Sesame seeds (optional)

Directions:
Directions:
Coat nonstick wok or skillet with sesame oil. Place over high heat 1 minute. Add snow peas, carrots, mushrooms and 1/4 cup of the green onion. Stir-fry over high heat until vegetables are crisp-tender. Add soy sauce and cooked noodles. Toss 1 to 2 minutes or until heated. Top with remaining 1/4 cup green onion; sprinkle with sesame seeds, if desired. Serve with Lo Mein noodles or rice
