2 c. flour
1 c. shortening
1/2 c. brown sugar
2 egg yolks
1/2 tsp. salt
2 egg whites, beaten
1 c. shredded coconut
jelly or jam

Directions:
Directions:
Combine flour, shortening, sugar, egg yolks and salt in a mixing bowl. Beat until uniform. Make balls about the size of large marbles. Beat egg whites and spread coconut on a plate. Dip cookie balls in egg whites, then roll in coconut. Place cookie balls on a cookie sheet and bake at 350º for five minutes. Remove from oven and press the center down in each ball. Return to oven and finish baking 8-10 minutes more. Remove from oven and fill centers with your favorite jelly or jam.
