1 24 oz bag frozen corn
1 12 oz can evaporated milk
1 c. frozen cubed potatoes
1 can chicken broth
1/2 c chopped red and green bell peppers
1/2 c. chopped onion
1 tbsp flour
4 tbsp butter
salt and pepper to taste

In a 2 quart saucepan, combine corn and broth. Cover and bring to a boil. Reduce heat and cook until corn is tender. Set aside. In a 3 quart saucepan, melt the butter, add onions and bell peppers; saute over med heat until tender. Sprinkle flour over onions and peppers, gently stir over medium heat until blended. Strain broth from corn and pour broth into pan with onions and peppers, stirring until flour is dissolved. Increase heat to boil. Reduce heat and stir until thickened. While thickening, spoon half the cooked corn into food processor and blend until smooth. Add the reminaing corn, pureed corn, potatoes and evaporated milk to the pan with broth and stir. Season with salt and pepper. Cook over low heat for 5 minutes or until hot.
