1 large butternut squash
1/4 c. chopped shallots
3 c. chicken broth
1 1/4 c. chopped onion
2 cloves garlic, finely chopped
2 c. milk or heavy cream
1/2 c. butter
salt and pepper to taste

Directions:
Directions:
Peel squash, remove seeds and cut into small pieces. Boil in water until tender. Drain water. Add broth, shallots, onion, garlic, salt, pepper and cook until tender. Puree all cooked liquid in a food processor until smooth. Return to pan. Add milk and butter and warm through.
