2 boneless chicken breasts
1/2 head iceberg lettuce
1/2 head Romaine lettuce
Cherry tomatoes halved
1/2 cup cilantro- chopped
1 can black beans
1 can corn
1 can sliced black olives
1cup Colby Jack cheese
1 avocado
Tortilla strips

Dressing choices:

Cafe Rio creamy cilantro,
Ranch Dressing
or BBQ sauce

Directions:
Directions:
Season chicken, then bake at 350 degrees for 30 minutes. Cool and chunk into pieces. Wash and tear lettuce, and cilantro. drain and rinse black beans and corn. Layer in shallow bowl- lettuces mixed, black beans, corn tomatoes, black olives, avocado chunks and sprinkle cheese on top. Garnish with cilantro. Serve with Ranch Dressing, barbecue sauce, or our favorite - creamy cilantro dressing and crispy corn tortilla strips from Cafe Rio.
