3 pounds Pork shoulder ground fine
3 tablespoons Salt
1 teaspoon whole Black peppercorns
½ cup Dry rubbed sage
1teaspoon whole Coriander
¼ up Maple Syrup
½ cup Water

Directions:
Directions:
Finely grind the spices with the salt and mix well into the ground pork. Beat in the maple syrup and water. Continue to stir until the mixture comes together. Stuff into sheep casings or form into 1 pound logs (Pokes).

The logs can be wrapped and frozen then later sliced as needed. Fry until pink (160 degrees), do not overcook.
