2 c. leftover cooked white rice
2-3 eggs, beaten
1/4 c. bell pepper, diced
2 T. margarine
1/4 tsp. each salt and pepper

Directions:
Directions:
Saute bell pepper in margarine over medium heat until soft. Add rice, salt and pepper. Stir until rice is hot. Add eggs and continue cooking until eggs are done.
