Grandpa Lee's Fudge Recipe

2 cups sugar
2 squares (1 oz.) unsweetened chocolate
1/3 cup corn syrup
1/2 cup milk
2 tbsp. butter or margarine
1 tsp. vanilla

Directions:
Directions:
Melt the sugar, unsweetened chocolate, corn syrup and milk over high heat. Stir until boiling. Turn heat to low. Cook approx. 10 minutes or to softball stage. DO NOT STIR during this time. Test by putting small amount in a cup of cold water. Should hold together, but still be soft.
Take off the stove and add the butter and vanilla. Again, DO NOT STIR. Set pan in a sink of cool water for approx. 10 minutes.
Mixture should still be on the hot side - not too cool. Beat with a wooden spoon by hand until fudge gets cooler and starts to look dull. This part can take awhile - 20 -30 minutes or so. When it turns from shiny to dull it will get stiffer - It should be ready to mold into logs. (It still may be quite warm to the touch. Butter your hands to form logs and place on buttered platter. Let finish cooling before slicing.

I have fond memories of Grandpa making this on Saturday evenings while we were watching Gunsmoke. We loved to have our own spoons to get tastes while he was beating the fudge.
This takes practice, but it's worth the effort - best fudge I've yet to find.
