1 1/2 lbs ground beef (85% lean / 15% fat)
1/2 cup brown rice (long-grain)
1 tbsp onion flakes
1/4 tsp black pepper
1/2 tsp salt
1 can tomato soup (canned, condensed)
1/2 cup water

Directions:
Directions:
In large bowl, combine meat, rice, salt, pepper and onion. Shape into small balls. Place on trivet inside pressure cooker so fat can drip to bottom of cooker.

Heat tomato soup and water in small bowl using microwave. Pour evenly over meatballs.

Close cover securely, then bring up to high pressure and cook for 10 minutes. Let pressure drop of its own accord (natural pressure release).

Eat them by themselves with a nice salad and steamed veggies. If you prefer they can be served with the sauce over hot cooked noodles or rice.

Quick and easy porcupine meatballs. Makes 18 meatballs, 1 serving should be about 3 meatballs. During the cooking process the beef fat drips down into the sauce at the bottom of the cooker, so for extra lean meatballs don't eat the sauce! Made using a 6 quart electric pressure cooker.
