1 T olive oil
1 T butter
4-5 boneless chicken breasts
salt and pepper to taste
3/4 c. white wine
1 t. onion powder
1/2 c half and half
1 1/2 T Dijon Mustard
2 1/2 t. fresh Tarragon, chopped

Directions:
Directions:
Melt the olive oil and butter in a skillet over medium high heat. Season the chicken with salt, pepper and onion powder. Brown on both sides. Remove chicken from pan and wrap in foil to keep warm. Deglaze the pan with white wine, and reduce by half. Stir the half and half into the pan. Mix in the mustard and tarragon. Cook and stir for 5 minutes or until thickened. Return chicken and juices to skillet. Heat for 10 minutes. Serve chicken with sauce.
