1 lb. ground beef
1/4 c. olive oil
1/2 c. chopped onion
1 clove garlic, minced
2 (6 oz) cans tomato paste
2 c. water
2 Tbsp. chopped parsley
4 tsp. basil
2 tsp. oregano
salt and pepper to taste
1 tsp. thyme
1 tsp. marjoram
3/4 lb. ricotta cheese
1/3 c. parmesan cheese
1 egg, beaten
2 Tbsp. chopped parsley
8 oz. manicotti
romano cheese

Directions:

Cook meat in oil until browned. Add next 7 ingredients; mix well. Stir in 1 1/2 tsp. salt and a dash of pepper. Simmer, uncovered, for about 45 minutes, stirring occassionally. Combine thyme, marjoram, ricotta cheese, parmesan, egg and parsley in mixing bowl; mix well. Season with salt and pepper. Cook manicotti in boiling, salted water until tender; drain and rinse in cold water. Stuff manicotti with cheese mixture. Pour half of meat mixture into 13 x 9 inch baking dish; arrange manicotti over meat. Top with remaining meat. Sprinkle with romano cheese. Bake in preheated 350 degree oven for 25 minutes or until heated through and bubbly.
