2 pounds green beans
6 slices of bacon
2 shallots, sliced
2 Tablespoons cider vinegar
2 Tablespoons whole-grained mustard
2 Tablespoons olive oil
salt & pepper

Directions:
Directions:
clean and cook beans just until tender, 4-5 minutes.

cook bacon till crisp 6-8 minutes, drain on paper towel, cool, then break into pieces
Discard all but 2 Tablespoons of bacon drippings from skillet and return to medium heat..

Add shallots and cook stirring for 1 minute.

Stir in vinegar, mustard oil and salt and pepper. Toss to combine.
