2 c. sugar
3/4 c. whole milk
2 1-oz squares unsweetened chocolate (3 tbsp. cocoa and 1 tsp. butter equals 1 square)
dash of salt
1 tsp. corn syrup (white)
2 tbsp. butter or margarine
1 tsp. vanilla
1/2 c. walnuts (optional)

Directions:
Butter sides of heavy 2 quart saucepan. In it combine sugar, milk, chocolate, salt and corn syrup. Heat and stir over med heat, till sugar dissolves and mixture comes to a boil. Then cook to soft-ball stage (234º on candy thermometer), stirring only if necessary. Immediately remove from heat; add butter and cool to lukewarm (110º on candy thermometer) without stirring. Add vanilla. Beat vigorously until fudge becomes very thick and starts to lose its gloss. Add nuts. Quickly spread in buttered shallow pan. Score when warm, cut when firm.
