3 eggs
1 c. cooking oil
2 c. sugar
2 c. peeled, grated zucchini
1 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 c. chopped walnuts (optional)

Directions:
Directions:
Beat eggs until foamy. Add oil, sugar, zucchini and vanilla. Mix well. Sift dry ingredients and add to egg mixture. Divide batter into 2 greased loaf pans. Bake at 325º for 45 minutes to 1 hour. Make sure bread is done before removing from oven. Cool on rack after removing from pans.

Can check if bread is done by placing toothpick into center and if it comes out clean bread is done.
