1.5 pounds pork tenderloin, cut into 3/4 inch cubes
1 cup barbecue sauce
1 onion, finely chopped
1.5 teaspoons chili powder
6 soft sandwich rolls

Makes 6 Servings

1. Place the pork, barbecue sauce, onion and chili powder in a 5 or 6 quart slow cooker; mix well. Cover and cook until the pork is fork-tender, 3-4 hours on high or 6-8 hours on low. (note: if you will be gone for more than 8 hours add a little extra BBQ sauce so the meat doesn't dry out)

2. With two forks, shred the pork. Fill each roll with 1/2 cup pork mixture.

Note 1: I don't like onions that much, so I tend to only use about 1/4 of a purple onion.
Note 2: This does freeze well.
Note 3: Recommend sticking with the pork tenderloin. I've tried other cuts, but it doesn't come out as good.
