7 lb. carrots
1 1/2 cups mayonnaise
3 Tbsp. onion minced
3 1/2 Tbsp. prepared horseradish
Salt and Pepper to taste
3/4 cup salting crackers, finely crushed
5 Tbsp. butter of margarine
Fresh parsley chopped
Paprika

Directions:
Directions:
Cook whole carrots in salted water until tender, saving 1/4 cup cooking liquid. Cut lengthwise in narrow strips. Arrange in 9" X 13" baking dish. Set aside. Combine cooking liquid with mayonnaise, onion, horseradish, salt and pepper. Pour sauce over carrots. Sprinkle cracker crumbs on top. Coat with butter. Sprinkle with parsley and paprika. Bake at 375º for 20 minutes.
