eggs, flour tortillas, olive oil, cheese, what ever you want to add: (bacon bits, tomatoes, onions, peppers, avocado, lettuce, salsa, etc.)

10 inch cast iron skillet, or fry pan. Heat oil on high to near smoke, crack egg and drop in center, breaking the yolk. Place flour tortilla over egg, pat and spread egg under the tortilla with a metal spatula. Check to see if egg has adhered to tortilla (30-70 seconds). When egg is cooked and attached to tortilla, carefully flip. lower heat to warm/medium and add ingredients, ending with cheese and covering with a second tortilla. Press down with spatula to attach. Flip as soon as possible, make sure cheese has melted. Brown both sides, cut into 1/4s.

these are great traveling breakfasts. They also make great appitizers with humus, guacamole and pesto. Variations are limitless. Pesto, shrimp and feta are outrageous!
