1/4 c. ground red pepper
2 tsp. salt
2 tbsp. ground white pepper
1 1/2 tsp. garlic powder
1 1/2 tsp. dried thyme
1 tsp. onion powder
8-10 lb. boneless beef rib-eye roast

Directions:
Directions:
Combine first 6 ingredients; lightly press on top and sides of roast. Place roast, fat side up, in a shallow roasting pan; insert a meat thermometer into the thickest part of roast, making sure it does not touch fat.

Bake, uncovered, at 425ºF for 10 minutes. Reduce temperature to 325ºF; bake 2 hours and 40 minutes or until thermometer registers desired degree of doneness.

Remove roast to a serving platter. Let stand 15 minutes before carving.
