Ingredients: Set oven at 410º (or thereabouts) & grease muffin pans WELL, then get out a LARGE mixing bowl and mix together: 2 cups self-rising flour 1/3 cup ground chia (highly nutritious seed eaten by Aztec warriors running long distances to sustain themselves) 1/2 cup ground flax (lots of Omega 3 goodies) 1/4 cup each of ground kamut & black sesame (more Omega 3 goodies) 1/4 cup Scotch (or steel cut or Old Fashioned) oats 1 cup quick oats 1/4 cup oat bran 1/4 cup candied ginger, finely diced 1/2 cup packed brown sugar 1/4 cup chopped pecans 1/4 cup sunflower seeds 1 diced apple some golden raisins 2 cups Craisins 1 Tbsp powdered cinnamon 1/2 tsp powdered ginger 1/2 tsp ground cloves In a smaller bowl combine the following: 2 cups buttermilk 4 eggs, beaten 1/2 cup honey 2 Tbsp REAL vanilla extract 1 tsp. REAL almond extract 2/3 cup canola oil

Directions:Gradually mix wet & dry ingredients (but no more than necessary as overmixing makes tough muffins) Fill muffin cups 2/3 full and bake around 17 minutes (watch 'em!) |

Notes: You can freeze these and then just briefly nuke what you need each morning. Would also make great (guilt free) after school snacks! However, they are so tasty & moist they tend to disappear quickly. Mac must be sneaking them . . .
