10 potatoes
1 ham steak, cut into cubes
carrots
onion
6 eggs
2-3 c. flour
salt & pepper
2 tbs. butter
whipping cream, if desired

Directions:
Directions:
Cube potatoes. Bring potatoes to boil. (The potatoes will cook down and help to thicken the water.) Add ham, carrots and onion and cook until tender.

After potatoes are cooked, in separate bowl beat 6 eggs together. Add flour, salt and pepper. Start with about 2 cups of flour - add enough flour until the consistency is very thick. It will be difficult to stir.

Drop egg dumplings by spoonfuls into boiling soup.
Reduce heat and cover. Add butter.

For a richer, thicker soup, I add whipping cream just before serving.
