2 Ham hocks
1 Soup bone
1 Portuguese sausage (hot or mild) sliced 1/4 in. thick
1 Medium onion (chopped)
1-2 cans kidney beans (can use dreid beans)
1 can tomato sauce and 1 tomato paste w/ 1/2 c. water
2-3 potatoes (medium) cut in cubes
2-3 carrots (medium) chopped
1/4 - 1/2 head cabbage sliced thin
1/4 - 1/2 tsp. cinnamon
Dash of salt

Directions:
Directions:
Place ham hocks, soup bone, Portuguese sausage, chopped onion, cinnamon and salt into a pot and cover with water. Simmer until tender.

Debone hocks and soup bone and place back into pot with the stock. Add remaining ingredients except the cabbage and cook until tender. Add cabbage and simmer for additional 5 minutes.

Serve with crusty bread or corn bread.

Dick and Georgeann Humphreys spent many years living on Oahu where Dick retired as a Navy Jet fighter pilot who served many missions over various parts of Viet Nam during the War. Their son, Steven was a famous tennis finalist at Kailua Racquet Club for many years. Georgeann is noted for her fabulous (mostly secret) local dishes and she graciously shared this one with us.
