1 T. sesame oil
1/4 c. rice wine vinegar
1/4 c. cooking sherry
1 t. garlic, minced
1 to 1-1/2# chicken, raw, cubed
3 T. oil
3 c. broccoli florets
1 c. carrots, sliced
2 t. cornstarch
1/3 c. soy sauce
1/3 c. hoisin sauce
1 T. ground ginger
1 c. cashews

Combine sesame oil, rice vinegar, sherry and garlic. Add chicken. Toss to coat, cover and marinate for 2 hours. Remove chicken from marinade and save. Heat oil in wok (or large slope sided fry pan) and stir fry chicken for 2-3 minutes. Remove chicken and set aside. Stir fry veggies until crisp-tender. Combine cornstarch, soy sauce, hoisin and ginger in reserved marinade. Stir into veggies then add chicken until thickens. Add cashews at end and serve over rice.
