3 dry chilies, fry quickly in a skillet, then re constitute in 1 C of chicken broth
6 tomatoes (plum/roma work best) Roast in a 400 oven until they pop, peel
1 Can beef broth
2 cans chicken broth
1 onion
3 cloves garlic
2 cooked chicken breasts, grill or bake
1 C cubed mozzarella cheese
avocado
chopped cilantro
lime
tortillas strips, fried crisp

Directions:
Directions:
In a large pot add 1 T olive oil, saute the onion and garlic, add one can chicken broth and one can beef broth.
Put the chilies and peeled tomatoes in the blender with the other can of chicken broth and blend till smooth. Pour into the beef/chicken broth, simmer. "Clean" out the blender, if needed, with a little water or extra broth and add to the soup.
Bake or grill chicken breasts. (or strip the meat from a rotisserie chicken). Cube mozzarella, chunk up the avocado, chop cilantro and half the lime. Fry tortillas strips till crisp. (or use good purchased tortilla chips)

To assemble:
In each soup bowl, add some chicken, cheese, and avocado. Ladle in the broth, top with cilantro and chips, and a squeeze of lime.

We were in Lockhart, Texas, in a GREAT little 'mom & pop' motel one evening after a long day rafting on the Guadalupe River. Nothing was on TV, and we were watching some Texas cooking show and they made this soup. I wrote down the ingredients and the instructions... When we got back to Tucson, I tried it. We have tried several Tortilla Soup recipes, and we really love this one best!
