1 T Ancho chili powder
1 T Chipolte chili powder
3 T Hot chili powder
1 t oregano
1 t garlic pepper (or garlic powder, no salt)
3 lb pork cut into chunks (i used cheep pork and pork loin)
2 (or more) cans chicken broth
water as needed
2 or more 28 oz cans of hominy

cut pork into bite size. In a large skillet, melt 1 lg T of bacon fat. Put the pork in and brown. Scoop out the meat, put into a crock pot (slow cooker). In the same skillet, melt another T of bacon fat. Add the chili powders and stir till paste forms. Slowly add the juice from the pork to make a 'gravy'. Add the chicken broth, one can at a time. Set simmer an hour or so on med low. (I covered mine so it would stay thin) Add the gravy to the meat in the crock pot. Cook on low till the meat is tender, but not falling apart. I had to add more chicken broth and water to the crock pot to keep it from getting too thick. About 30 min before serving, add the hominy, as much as you like, 2 or more 28 oz cans. Garnish with chopped green onion, and cilantro and fresh lime.

I make this on MLK day, and have everyone over. We need a January holiday... I serve it with flour tortillas, the kind you buy raw, and cook on the stove top. Yummmmmm
