8 slices bacon
1 1 1/2 lb. beef flank steak
1 10 oz. package frozen chopped spinach, thawed and well drained
1/4 cup grated Parmesan cheese

In a large skillet, cook bacon until done, but not crisp.
Score the steak by gently cutting a diamond pattern into the meat with a knife. Not too deep, but make an impression!
Do the same on the other side of the steak.
Use a meat tenderizer to pound the steak, starting from the center of the steak and working out to both sides, into a 12 x 8 inch rectangle, or as close as you can come.
Sprinkle the meat with salt and pepper, then arrange the bacon lengthwise on the steak.
Spread the spinach over the bacon, and sprinkle with the Parmesan cheese.
Roll up from one of the short sides, and secure with toothpicks at one inch intervals, starting 1/2 inch for one end.
Cut between the picks into 8 1 inch slices.
Can either be broiled or barbequed. Either way, 6 mins. on each side for medium, a few minutes less for rare.

Serve with Bernaise sauce.
